Winter in Texas
In Texas, we don't get that many days that are made for chili making, but yesterday was one. It was cold - in the 30's, rainy and a slight chance of ice - that's the best it's going to get!
This chili is different than the one that I usually make and I have to say it might even be better - it was perfect to come home to after work.

Used red and orange peppers and this chili mix - it's awesome and doesn't have a strong chili powder taster, but lots of flavor!

French Macaroon Flavors

Almond-Raspberry:
Tint the batter with 2 drops neon pink gel food coloring; flavor with almond extract. Fill with seedless raspberry jam (you'll need about 3/4 cup).
Mint-White Chocolate:
Tint the batter with 2 drops mint green gel food coloring; flavor with mint extract. For the filling, microwave 3 ounces chopped white chocolate, 2 tablespoons heavy cream and 1 tablespoon butter in 30-second intervals, stirring, until smooth. Stir in 1/4 teaspoon mint extract and 1 drop mint green gel food coloring.
Blueberry Cheesecake:
Tint the batter with 3 drops royal blue gel food coloring; flavor with vanilla extract. For the filling, mix 4 ounces softened cream cheese and 3 tablespoons blueberry jam.
Lavendar-Honey:
Tint the batter with 2 drops violet gel food coloring; flavor with almond or vanilla extract. For the filling, mix 3/4 cup mascarpone cheese, 2 tablespoons honey and 1 teaspoon ground dried lavender.
Pineapple:
Tint the batter with 2 drops lemon yellow gel food coloring; flavor with vanilla extract. For the filling, press 3/4 cup pineapple jam through a sieve, discarding any large pieces.

Danna's Cabbage Soup

INGREDIENTS
½ head of cabbage, chopped
1 cup celery, diced
1 cup white or yellow onion, diced
1 cup carrots, diced
1 green bell pepper, diced
2-3 cloves garlic, minced
4 cups chicken broth
14 oz can basil, oregano, garlic diced tomatoes
1 teaspoon oregano
1 teaspoon basil
½ teaspoon red pepper flakes
few shakes of black pepper
½ teaspoon salt (optional)

INSTRUCTIONS
. Heat 2 tablespoons of olive oil in a large pot over medium heat.
. Add celery, onions, bell peppers, and carrots.
. Saute until slightly tender.
. Stir in garlic.
. Pour in chicken broth.
. Stir in tomatoes and cabbage.
. Bring to a boil and then reduce heat.
. Cook until cabbage is tender.
. Stir in oregano, basil, red pepper flakes, black pepper and salt (if using)
. Taste broth and adjust seasoning if needed.
. Serve and enjoy!

3 cups V-8 juice (you can use low-sodium V8 or even tomato juice, homemade or store bought)
2 cans Italian diced tomatoes
1 small onion
2 cloves minced garlic
1 package sliced mushrooms
3 carrots, peeled and sliced
1 zucchini, diced
1 yellow squash, diced
2 cups fresh or frozen green beans
1 can kidney beans, drained and rinsed
3-4 cups shredded cabbage
1 tsp. Italian seasoning
Salt and Pepper to taste
Instructions
In a large frying pan sprayed with cooking spray, sauté garlic, onions, carrots, and mushrooms for about 5 minutes. In a large crockpot, combine sautéed garlic and vegetables with the remaining ingredients. Cook on high for 2-3 hours, or until vegetables are cooked.
This makes a large batch of soup. If you would like to freeze portions of it to use later, undercook the vegetables just a little. Pour the soup into freezer Ziplock bags and let as much air out as you can. Lay the bags flat on a cookie sheet and freeze. Once the soup is frozen flat, it is easy to layer in your freezer and won't take up much room. To thaw, place the bag in the fridge for 24 hours and then reheat.
